A cozy and nutritious baked oatmeal perfect for a quick breakfast or snack, customizable with berries and nuts.

Ingredients

Dairy or nondairy milk

  • 1 and 3/4 cups milk (dairy or nondairy)
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/4 cup unsweetened applesauce or mashed banana
  • 3 cups old-fashioned whole rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups mixed berries, fresh or frozen (do not thaw)

optional topping

  • 1/2 cup chopped walnuts or pecans

Instructions 

  • Preheat oven to 350°F (177°C) and prepare a 9x9 inch or similar baking dish.
  • Whisk all ingredients together in a large bowl and pour into the prepared dish. Top with nuts if desired.
  • Bake for 35 minutes until the center is almost set. Cool for 5 minutes before serving.

Notes

You can customize with different fruits or nuts for variety.
